Y que no conoce el fin
And that does not know the end
conocer [verb] = to know, to be familiar with, to have met (e.g. a person)
saber [verb] = to know (the information, the facts, the skill)
no conoce el fin = does not know the end; has never seen the end; has no concept of the end
no sabe el fin = does not know the end; does not know what the end is exactly
Ella conoce matemáticas. = She is familiar with (different types of) mathematics.
[It sounds like either she is very good at math or she doesn’t know math but she knows about math.]
Ella sabe matemáticas. = She knows math. She knows how to do math.
“Alguien quien no sabe química” is “someone who does not know chemistry,” who may know that it exists but either never learned it or never tried to learn it.
“Alguien quien no conoce química” is “someone who does not know chemistry,” who may not have had the opportunity to learn about it yet, who has not been introduced to it yet.

A heart that beats for you
The first time, I instinctively translated this as: “A heart that beats for thee.”
I speak Mexican Spanish, so I don’t use “vos.” When I hear “vos,” it sounds like “thee” to me. However, vos is common in some regions. See the Voseo article on Wikipedia.
Hoy y siempre gracias yo te doy a ti, mi amor
Today and always I give thanks to you, my love
(Hoy y siempre) (gracias) (yo te doy) (a ti), (mi amor)
(Today and always) (thanks) (I give you) (to you), (my love)
The phrase could have been shorted to: Hoy y siempre gracias te doy, mi amor.
Or rearranged to: Hoy y siempre te doy gracias, mi amor. [This is a more natural way of saying it.]
“Yo” and “a ti” are redundant to emphasize “I” and “to you.”
